Tortilla Toasts with Avocado-Olive Salsa

What you need:

+ 1 1/2 c. seeded and diced tomatoes
+ 1 c. ripe olives, halved
+ 1 c. diced avocado
+ 2 Tbsp. lime juice
+ 2 Tbsp. chopped fresh cilantro
+ 1 tsp. minced garlic
+ 1/4 tsp.salt
+ 2 eggs
+ 2 Tbsp. low-fat milk
+ 4 flour tortillas
+ cooking spray
What to do:
1. In a medium sized bowl, combine tomatoes, olives, avocado, lime juice, cilantro, garlic and salt. Set aside.
2. In a separate shallow bowl, whisk together eggs and milk. Place tortilla in egg mixture and soak for 3-5 min.
3. Heat a medium-sized sauté pan over medium heat. Lightly coat with cooking spray. Place one tortilla in the pan and cook for 2 min. until golden, then flip and continue cooking on other side for 1-2 min.. Repeat with remaining tortillas.
4. To serve, place 1 tortilla on each plate and serve with approximately 3/4 c. of salsa.
Makes 4 servings (1 tortilla and 3/4 c. salsa per serving.)
